I recently stocked up on precut fruit on clearance, and having ready-to-eat fruit in the fridge makes healthy snacking so easy. When fruit is already prepped, the kids can grab a quick breakfast or an after-school snack without any fuss.

We often serve apples with a homemade caramel sauce, which is another family favorite. For larger gatherings we’ll sometimes bring out a cherry cheesecake dip that disappears fast — everyone loves it.

With the extra fruit I bought, I decided to make a refreshing pineapple dip. This recipe is light, tropical, and especially good for spring and summer barbecue gatherings.

This recipe is just four ingredients and takes only a few minutes to prepare. I chilled mine for about an hour to let the flavors meld, but it tastes great right after mixing. It makes a generous bowl—perfect for parties—though you can easily halve the recipe for a smaller group.

Ingredients
8 oz cream cheese, softened
20 oz can crushed pineapple in heavy syrup
1 (3.4 oz) package vanilla instant pudding mix
1 cup thawed Cool Whip whipped topping

Directions
1. Beat the softened cream cheese until smooth.
2. Add the crushed pineapple with its syrup and the vanilla pudding mix to the cream cheese.
3. Beat with a hand mixer for about 2 minutes until thoroughly combined.
4. Gently fold in the thawed Cool Whip until the dip is light and fluffy. Chill if desired before serving.

This recipe yields a large bowl—ideal for parties—and stores well covered in the refrigerator for a couple of days. Serve with fresh fruit, graham crackers, cookies, or vanilla wafers for an easy and delicious treat.
