Ingredients

  • 3 boneless, skinless chicken breast halves (about 1½ lb. total)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Garlic powder, to taste
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 small eggs, lightly beaten
  • 1 cup coarse corn flakes crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Make corn flake crumbs by pulsing about 2½ cups of corn flakes in a food processor or crushing them in a zip-top bag with a rolling pin. Aim for slightly coarse crumbs for extra crispness.
  3. Season each chicken breast on both sides with salt, pepper, and garlic powder.
  4. Carefully cut a pocket into each breast to create space for the filling.
  5. Fill each pocket with shredded cheddar and press the edges to help seal.
  6. Set up three shallow dishes: flour in the first, beaten eggs in the second, and in the third combine corn flake crumbs with grated Parmesan. Stir in the olive oil until the mixture is evenly moistened.
  7. Working with one chicken breast at a time, lightly coat both sides with flour, being careful not to open the pocket.
  8. Dip the floured breast into the beaten egg and allow excess to drip off.
  9. Press into the corn flakes–Parmesan mixture to coat thoroughly, then place on the prepared baking sheet.
  10. Bake for 25–30 minutes, or until the coating is golden brown and the chicken is cooked through. Let rest briefly before serving.
