Ingredients

For the Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 eggs
  • 1 cup Andes mints, chopped

Buttercream Frosting

  • 1 tsp vanilla
  • 3 cups powdered sugar
  • 1 cup unsalted butter, room temperature
  • 3 tbsp heavy whipping cream

Decorations

  • Green food coloring
  • Granulated sugar or white sprinkles
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin pan with liners. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.

  7. Pipe white frosting onto each cupcake, then dip into granulated sugar or white sprinkles to create a snowy base. Pipe stacked dollops of green frosting to form trees (three or more dollops per tree).
