Stir

Mix with a fork until combined, then fold with a spatula until the mixture is thick and evenly mixed.

Ingredients

  • 1 cup smooth peanut butter
  • ½ cup coconut flour
  • 3 tablespoons low-carb keto maple syrup (or other low-carb sweetener)

Instructions

  • Line a baking sheet with parchment or wax paper. Set aside.
  • In a medium bowl combine peanut butter, coconut flour, and keto maple syrup.
  • Stir with a fork until mixed, then fold with a silicone spatula until thick and well incorporated.
  • Use a small or medium cookie scoop to portion the mixture into balls on the prepared sheet. Space them evenly. Enjoy.

Notes

Storing: Store in an airtight container at room temperature or refrigerated for 1–2 weeks. Bites are softer on Day 1 and firm up after that.

Freezing: Freeze in an airtight container for 1–2 months. They remain firm but are still easy to eat straight from the freezer.
