BLTTA Tortas — Authentic Mexican Sandwiches & Torta Recipes

School is back in session and lunchtime routines are underway. My son is ten now and eats just as much as his older sister, who’s a high school junior. He’s moved past the kid’s menu and half sandwiches — he’s a growing boy and loves a hearty torta.

My mom used to make tortas for us when we were kids, and every time I assemble one I’m taken back to those road trips and summer days at the lake. These tortas are similar to hers but I add a few extras, like bacon, and I swap avocado slices for a creamy avocado mayonnaise so it won’t slip out of the roll.

I make BLTs all summer when garden tomatoes are at their best — add avocado and you have a BLTA. Instead of fragile avocado slices, mashing avocado with a bit of mayonnaise creates a smooth, spreadable condiment that adds richness without sliding around. It’s a healthier twist on traditional mayo and perfect for a torta.

This bolillo features Applegate Natural Oven Roasted Turkey Breast, which I feel good about serving my family — no antibiotics ever and simple, clean ingredients. And bacon? It makes everything better. I use a hardwood-smoked bacon for a sweet, salty, smoky, crunchy contrast that completes the sandwich.

BLTTA Tortas

These tortas are just like the ones my mom used to make but with a few extras like bacon, and instead of avocado slices I use a creamy avocado mayonnaise.

Ingredients 

  • 2 bolillos
  • 1 avocado, peeled, pitted, and coarsely mashed
  • 2 tablespoons mayonnaise
  • kosher salt, to taste
  • 4 slices Applegate Natural Oven Roasted Turkey Breast
  • 4 slices cooked Applegate Organics Sunday Bacon Brand
  • lettuce
  • 1 tomato, thinly sliced

Instructions 

  • Cut bolillos in half lengthwise.
  • In a small bowl, combine the avocado and mayonnaise, mixing until smooth. Season with kosher salt to taste.
  • To assemble the tortas, spread the avocado mayonnaise on the bolillo, then layer with bacon, lettuce, tomato, and turkey.

Notes

  • This bolillo uses Applegate Natural Oven Roasted Turkey Breast, which contains simple ingredients and is raised without antibiotics. The hardwood-smoked bacon adds a sweet, smoky crunch that complements the creamy avocado spread.
