Just when I think my weekly menu is already full of great meals, more items keep appearing on the schedule. That’s fine — some dishes will simply roll into next week.
Monday: sweet potato chili. I’m trying my own version of this for a meatless supper in the coming week, so you’ll see the recipe on the journal soon.
Tuesday: tater tot casserole. Something comforting and hearty for a day expected to be rainy and gray. I plan to tweak the recipe a bit this time.
Wednesday: marinated grilled chicken with couscous tomato salad. I didn’t get to this two weeks ago, and it should be quick to prepare before meeting a friend that evening.
Thursday: leftovers. I had another recipe planned, but I decided to save it to serve to Andy’s parents when they visit this weekend.

Asian peanut butter pork. Don’t forget to squeeze fresh lime over your serving — that really makes a difference. At first bite the flavors seemed a bit muted, but the lime brightened the dish and lifted the profile. My guest really enjoyed it, surprisingly. This recipe yields a large amount, enough for a family dinner plus several generous leftovers.
