  • 80% lean ground beef (1 lb)
  • 4 slices bacon, chopped (or precooked equivalent)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 Tbsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Sea salt & black pepper, to taste
  • 1/2 head chopped cauliflower (optional for carnivore version)
  • 3 cups beef broth or bone broth
  • 1/3 cup heavy cream
  • 3 cups shredded sharp cheddar cheese
  • Fresh parsley or chives for garnish (optional)

Use a heavy soup pot or a large, high-sided skillet for best results.

Tips, Tricks and Hacks

  • Leftover crisp bacon works well; precooked bacon can be used and warmed briefly in the microwave before serving.
  • If using precooked or leftover bacon, add 1 tablespoon of lard, tallow, or butter to the pan to brown the ground beef since you won’t have fresh bacon fat.
  • For a Keto Carnivore adaptation, omit the cauliflower—the rest of the ingredients are suitable for a relaxed Carnivore plan.
  • To avoid curdling when adding cream, temper it by stirring in a small amount of hot broth or soup liquid before combining it with the pot.

This low-carb bacon cheeseburger soup brings the cozy comfort of a cheeseburger to a bowl. It’s rich, creamy, and ideal for family dinners on cold nights.

Ingredients

  • 4 slices bacon, chopped
  • 1 lb lean ground beef
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 Tbsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Sea salt & black pepper, to taste
  • 1/2 head chopped cauliflower (optional)
  • 3 cups beef broth
  • 1/3 cup heavy cream
  • 3 cups shredded sharp cheddar cheese

Instructions

  1. Heat a large high-sided skillet or heavy soup pot over medium heat.
  2. Add the bacon and cook until crispy, about 5 minutes (skip if using precooked bacon).
  3. Transfer the cooked bacon to a paper-towel-lined plate, leaving about 1 tablespoon bacon grease in the pan.
  4. Add the ground beef to the skillet and sprinkle with onion powder, garlic powder, Italian seasoning, smoked paprika, salt, and pepper. Cook, stirring occasionally, until browned, about 5 minutes.
  5. Add the chopped cauliflower (if using) and the beef broth. Stir, cover, and reduce heat to medium-low. Simmer until cauliflower is fork-tender but not mushy, about 7–8 minutes.
  6. Remove the skillet from heat. Temper the heavy cream by mixing in one or two tablespoons of hot soup liquid, then stir the tempered cream and the shredded cheddar into the pot until the cheese is fully melted. Adjust seasoning to taste.
  7. Ladle into bowls, crumble the reserved bacon over each serving, and garnish with chopped parsley or chives if desired. Serve immediately.

Notes

  • Precooked or leftover bacon shortens prep time—just warm it before serving.
  • When using precooked bacon, add a tablespoon of fat (lard, tallow, or butter) to brown the beef.
  • For a Carnivore-friendly bowl, omit the cauliflower and any herb garnish.
