Ice Cream Pebbles Marshmallow Cereal Bars Recipe – a simple 3-ingredient cereal bar made with Rainbow Sorbet Ice Cream Pebbles. These Rice Krispies–style treats are colorful, chewy, and perfect for kids and parties.

Making themed cereal bars has become a favorite tradition in our house. They’re quick, kid-friendly, and endlessly adaptable. Instead of the usual Rice Krispies, I discovered Post’s Ice Cream Pebbles Rainbow Sorbet—cereal that tastes like ice cream—and immediately knew they’d make fun, colorful bars.
I shared the discovery on Instagram and many of you were just as excited. These bars taste like toasted marshmallow and sherbet combined—basically toasted marshmallow ice cream—and they turned out delightfully gooey and crunchy.

Although I made these for Easter, they’re equally perfect for spring and summer gatherings—think picnics, play dates, or beach snacks. The bright colors and ice-cream-like flavor make them especially festive.

I made the bars in an 8″ square pan to keep them thick and substantial, but you can use a 13″ x 9″ pan if you prefer more, thinner squares. I used Kraft Jet-Puffed Fun-Mallows mini marshmallows as the binder and stirred a handful of whole marshmallows in at the end so they’d be visible in the finished bars. The ratio of melted marshmallows to cereal keeps the bars soft and chewy while maintaining some crunch.

Ice Cream Pebbles Marshmallow Cereal Bars Recipe

Ingredients
- 5 cups Ice Cream Pebbles Rainbow Sorbet or rice krispies cereal
- 4 Tablespoons butter
- 1 10 oz pkg mini marshmallows I used Fun-Mallows from Kraft
Instructions

Grease and line an 8″ square baking pan or a 13″ x 9″ pan with parchment paper. Set aside.

Grease a large mixing bowl and a spatula to prevent sticking. Place the cereal in the greased bowl.

Reserve 3/4 cup of mini marshmallows and set aside.

In a medium saucepan, melt the butter over low heat. Add the remaining mini marshmallows and stir constantly until fully melted and smooth.

Pour the melted marshmallow mixture over the cereal and fold gently with the greased spatula until the cereal is evenly coated. Stir in the reserved mini marshmallows.

Transfer the mixture to the prepared pan and press evenly to smooth the top.

Chill for 1 to 2 hours, or until set. Cut into squares and serve.
