Right now grocery stores are overflowing with fresh strawberries, and we’re taking full advantage. We eat them by the handful, make syrups, sauces, and fruit roll-ups, and bake with them whenever we can. After making a large batch of strawberry syrup for red layers in popsicles, I started thinking about other uses for the leftover syrup. Pancakes were an obvious favorite, but we also wanted something bubbly and fun for the kids. My children don’t drink commercial soda — I avoid the high fructose corn syrup and additives — but they do enjoy fizzy drinks. That inspired this simple, homemade strawberry soda that’s both bright and refreshing.

Ingredients

  • 1/2 lb strawberries ripe, fresh, chopped
  • 2 tbsp sugar
  • 1/4 cup water
  • 3 cups sparkling water chilled

Instructions

  1. Add the chopped strawberries, sugar, and 1/4 cup water to a saucepan and stir to combine.
  2. Cook over medium heat for about 30 minutes, stirring occasionally, until the strawberries are very soft and syrupy.
  3. Transfer the strawberry mixture to a blender and blend until smooth.
  4. Strain the blended strawberries through a fine mesh strainer into a heat-safe container to remove most of the seeds.
  5. Refrigerate the strawberry syrup until chilled, about 30 minutes.
  6. Pour the chilled sparkling water into a pitcher.
  7. Add 1/2 cup of the strawberry syrup to the sparkling water and stir gently to combine. Taste and add more syrup if you prefer a sweeter, stronger flavor.
  8. Serve over ice and garnish with fresh strawberry slices or a sprig of mint if desired.
