Eggnog Mocha Mug Cake

Ingredients
- 3 Tbsp white whole wheat flour
- 2 Tbsp cocoa powder
- 1 tsp instant coffee (holiday or preferred blend)
- 1/2 tsp baking powder
- 1 Tbsp raw sugar
- 1/4 tsp nutmeg
- 3 Tbsp eggnog (dairy-free coconut milk or regular)
- 2 tsp unsweetened applesauce
- 1/4 tsp vanilla extract
Instructions
- In a small bowl, whisk together the flour, cocoa, instant coffee, baking powder, sugar and nutmeg until evenly combined.
- Add the eggnog, applesauce and vanilla. Whisk until the batter is smooth and no clumps remain.
- Spoon the batter into a microwave-safe coffee mug. Microwave on high for 1 minute and 15 seconds, or until the cake is set.
- Allow to cool slightly, then top with whipped cream or a drizzle of chocolate syrup if desired. Serve warm and enjoy.
