With grilling season underway, a bright, refreshing side is always welcome. This recipe is intentionally simple: apples, celery and a coleslaw cabbage mix tossed with a poppy seed dressing. It’s quick to prepare and versatile—feel free to keep it classic or add a few optional ingredients for extra flavor and texture.

The dressing is easy to whisk together and the apple cider vinegar helps prevent the apples from browning, so this slaw stores well in the refrigerator and can be made a day or two ahead.

Optional add-ins:

  • 1/2 cup toasted walnuts or pecans
  • 1/2 cup raisins or craisins
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sunflower seed kernels
  • 1 cup sliced grapes

What kind of apples should I use for apple cabbage coleslaw?

Use your favorite eating apple. Gala works well for a sweet, mellow flavor, while Granny Smith, Fuji, Jonathan or Pink Lady give a firmer bite and brighter tartness. Choose the apple that matches the balance you prefer between sweet and tangy.

Can I make apple coleslaw ahead of time?

Yes. The apple cider vinegar in the dressing slows browning, so you can prepare the slaw a day or two in advance. Store it covered in the refrigerator and give it a gentle stir before serving.
