
Cranberry Chicken Salad on Apple Slices
Perfect for lunch or as a satisfying afternoon snack. Makes 4 light servings.
Ingredients
- 2 cooked chicken breasts, chopped
- ½ cup dried cranberries
- ⅓ cup chopped roasted pecans
- ⅓ cup crisp celery, thinly sliced
- ½ cup plain Greek yogurt
- ½ tsp curry powder
- Sea salt and freshly ground black pepper, to taste
- 2–3 medium apples, thinly sliced into rounds

Instructions
1. In a large mixing bowl, combine the chopped chicken, dried cranberries, pecans and sliced celery.
2. In a small bowl, whisk together the Greek yogurt and curry powder until smooth.
3. Season the dressing with sea salt and pepper to taste.
4. Pour the yogurt dressing over the chicken mixture and stir until everything is evenly coated.
5. Arrange apple slices on a platter and spoon the cranberry chicken salad onto each apple round, or serve the salad alongside apple slices for scooping.
