Happy New Year to everyone!

I’ve just returned from a wonderful trip to France that combined family time in the Alps with plenty of excellent food — and yes, plenty of chocolate. The trip included skiing in fresh mountain air, relaxed meals with loved ones, and new culinary inspirations that I’m excited to explore this year. While I’ll share more about the journey and the tasty discoveries soon, I want to tell you about something that happened while I was away: the recipes from the chocolate contest I entered were published.

I’m grateful to Laurent for organizing the contest; it was a fun and energizing challenge. I had very little time to prepare my entry — I only learned about the contest the day before the submission deadline — but that made the experience even more thrilling. It felt a bit like an episode of Iron Chef: sudden inspiration, rapid execution, and the joy of creating under pressure. Despite the time constraint, the process reminded me why I love working with chocolate: its textures, aromas, and the way it pairs with unexpected ingredients.

The contest brought together a diverse range of chocolate recipes, each showcasing different techniques and flavor combinations. My contribution focused on simple, elegant flavors that emphasize the cocoa’s depth without overpowering it. I combined chocolate with seasonal fruit and a touch of spice to create a balanced dessert that highlights both brightness and richness. The goal was to craft something approachable for home cooks while still offering a memorable taste experience.
