Chipotle-Style Corn Salsa Recipe — Zesty Corn Salsa Copycat

This easy corn salsa tastes just like Chipotle’s and comes together in about 5 minutes. Serve it with tortilla chips or use it as a bright topping for tacos and burrito bowls.

I make this copycat of Chipotle’s corn salsa often — it’s fresh, flavorful, and a simple way to add color and nutrition to weeknight meals. Sweet corn mixed with red onion, jalapeño, lime juice, and cilantro creates a lively salsa that pairs with many proteins and dishes.

Ingredient Notes

The ingredients to make Easy Corn Salsa just like Chipotle's with text overlay.
  • Frozen corn – A bag of frozen yellow sweet corn keeps this recipe quick and convenient.
  • Red onion – Adds color and a sharp, fresh bite.
  • Jalapeño – Remove seeds and ribs for a mild salsa; leave some in if you prefer more heat.
  • Lime juice – Fresh lime juice brightens the salsa. Choose a ripe, slightly soft lime for the best flavor.

How to Quickly Thaw Frozen Corn

A quick thaw works great when you forget to thaw corn ahead of time. Place a colander in the sink, add the frozen corn, and rinse with cold water for about a minute while stirring the corn with your hands. Drain well and repeat if needed. This method keeps the kernels cold and fresh-tasting. Do not thaw frozen vegetables at room temperature for food safety reasons.

  1. Combine thawed corn, diced red onion, seeded and diced jalapeño, and chopped cilantro in a medium bowl.
  2. Add fresh lime juice and salt to taste; toss gently to combine. Serve immediately or chill until ready to serve.
