School is back in session and lunchtime routines are underway. My son is ten now and eats just as much as his older sister, who’s a high school junior. He’s moved past the kid’s menu and half sandwiches — he’s a growing boy and loves a hearty torta.

My mom used to make tortas for us when we were kids, and every time I assemble one I’m taken back to those road trips and summer days at the lake. These tortas are similar to hers but I add a few extras, like bacon, and I swap avocado slices for a creamy avocado mayonnaise so it won’t slip out of the roll.

I make BLTs all summer when garden tomatoes are at their best — add avocado and you have a BLTA. Instead of fragile avocado slices, mashing avocado with a bit of mayonnaise creates a smooth, spreadable condiment that adds richness without sliding around. It’s a healthier twist on traditional mayo and perfect for a torta.

This bolillo features Applegate Natural Oven Roasted Turkey Breast, which I feel good about serving my family — no antibiotics ever and simple, clean ingredients. And bacon? It makes everything better. I use a hardwood-smoked bacon for a sweet, salty, smoky, crunchy contrast that completes the sandwich.

Ingredients
- 2 bolillos
- 1 avocado, peeled, pitted, and coarsely mashed
- 2 tablespoons mayonnaise
- kosher salt, to taste
- 4 slices Applegate Natural Oven Roasted Turkey Breast
- 4 slices cooked Applegate Organics Sunday Bacon Brand
- lettuce
- 1 tomato, thinly sliced
Instructions

Cut bolillos in half lengthwise.

In a small bowl, combine the avocado and mayonnaise, mixing until smooth. Season with kosher salt to taste.

To assemble the tortas, spread the avocado mayonnaise on the bolillo, then layer with bacon, lettuce, tomato, and turkey.
