Mini Piña Colada Cheesecakes

These mini cheesecakes are inspired by the classic cocktail and finished with a small umbrella because a Piña Colada presentation feels incomplete without that playful touch. They balance a tender coconut crust, a silky coconut-pineapple cheesecake, a smooth pineapple sauce, and a cloud of coconut-scented whipped cream.

Coconut Cookie Crust

A true Piña Colada centers on three main flavors: coconut, pineapple, and rum. For the crust, coconut is front and center. I used coconut cookie crumbs for a richer coconut flavor, mixed with a touch of sugar and melted butter to form a sturdy base. If you prefer, graham crackers or another cookie could be substituted.

Originally I experimented with rum extract in the crust for added depth, but it can sometimes make the crust soften after a couple of days, so the simpler version without extract works best for texture and stability.

Piña Colada Cheesecake Filling

The cheesecake batter starts with a classic creamy base but swaps traditional vanilla for a piña colada profile: a hint of rum extract, canned pineapple juice, and canned coconut milk. These simple additions transform a familiar cheesecake into a tropical dessert. For extra texture, consider folding in 1/3 to 1/2 cup each of toasted coconut flakes and finely chopped pineapple.

Homemade Pineapple Sauce

A smooth pineapple sauce complements the cheesecake. The sauce is simply made from crushed pineapple, sugar, cornstarch, and a small amount of water cooked until thickened. For a refined topping that spreads easily over the cheesecakes, blend the cooked mixture until smooth to remove any large chunks.

Piña Colada Toppings

Finish each chilled cheesecake with a spoonful of pineapple sauce, then pipe or dollop coconut-flavored whipped cream on top. I use heavy whipping cream flavored with a small amount of coconut extract so the whipped cream holds firm and has a clean coconut taste. Sprinkle toasted coconut over the whipped cream, add a cherry, and for a final festive touch, place a mini cocktail umbrella on each serving.

These cheesecakes will keep in the refrigerator for 2–3 days, though they’re best when prepared the day before serving and topped the same day. The combination of a crisp coconut crust, creamy coconut-pineapple filling, bright pineapple sauce, and toasted coconut garnish creates a delightful balance of flavors and textures—essentially a Piña Colada you can eat.

Have you tried these Mini Piña Colada Cheesecakes? Share your results and any variations you love. Fresh cherries are great in season, but maraschino cherries work perfectly as well. The pineapple sauce can be made ahead and stored in an airtight container in the fridge for a few days to make assembly quick and easy.

  • ½ cup granulated sugar
  • 1 tablespoon cornstarch (or 3 tablespoons all-purpose flour)
  • ½ cup sour cream, room temperature
  • 3 tablespoons pineapple juice (from canned pineapples)
  • 3 tablespoons canned coconut milk (shake well before opening)
  • 1 teaspoon pure rum extract
  • 2 large eggs, room temperature

Pineapple Sauce:

  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 10 oz can crushed pineapple (juice included)
  • ⅓ cup water

Coconut Whipped Cream:

  • 1 cup heavy whipping cream, chilled
  • 6 tablespoons powdered sugar
  • ½ teaspoon pure coconut extract

Garnish:

  • ¼ cup shredded coconut, toasted
  • 12 cherries
  • 12 cocktail umbrellas (optional)

Instructions

For the Crust:

  1. Preheat oven to 350°F and line a 12-cup muffin pan with liners.
  2. Mix coconut cookie crumbs, sugar, and melted butter until combined.
  3. Place about 1 heaping tablespoon of crumbs into each liner and press flat. Bake 5 minutes, then cool. Reduce oven temperature to 325°F.

For the Piña Colada Cheesecakes:

  1. Beat cream cheese, sugar, and cornstarch on low until smooth, 1–2 minutes.
  2. Scrape the bowl and add sour cream, pineapple juice, coconut milk, and rum extract; beat until silky.
  3. Add eggs one at a time, mixing slowly until just combined. Tap the bowl a few times to release air bubbles.
  4. Divide batter evenly among liners. Bake 18–20 minutes until centers are slightly jiggly.
  5. Cool completely on a rack, then refrigerate covered until firm, about 4 hours or overnight.

For the Pineapple Sauce:

  1. Combine sugar, cornstarch, crushed pineapple with juice, and water in a small saucepan over medium heat.
  2. Bring to a boil, stirring constantly, and cook until thickened, about 3–4 minutes. Boil an additional 1–2 minutes.
  3. Remove from heat and blend until smooth. Chill thoroughly before using.

For the Coconut Whipped Cream and Assembly:

  1. Whip the chilled heavy cream with powdered sugar and coconut extract until stiff peaks form, about 2–3 minutes.
  2. Spoon pineapple sauce over each chilled cheesecake.
  3. Pipe or dollop whipped cream, sprinkle toasted coconut, top with a cherry and an optional cocktail umbrella. Serve and enjoy.

Notes

  • The pineapple sauce can be prepared ahead and stored in an airtight container in the fridge for up to 3 days.
  • Maraschino cherries are a perfectly acceptable alternative if fresh cherries are out of season.
