Crock-Pot Quinoa with Vegetables: Flavorful Slow Cooker Recipe

I’ve recently grown to enjoy quinoa and have been curious about making it in a crock pot. When I found this simple, healthy and flavorful crock pot vegetable quinoa recipe from Amanda at Moms with Crock Pots, I wanted to share it.

This is the kind of light, nourishing dish that feels right for this season—easy to prepare, versatile, and satisfying without being heavy.

The recipe is flexible: you can swap or add vegetables and fresh herbs to suit your taste. I would consider stirring in a handful of chopped grape tomatoes and a splash of lemon juice or red wine vinegar at the end for brightness and a pop of color.

Based on my calculations, a quarter of the recipe contains about 315 calories, 8.4 g fat, 46.8 g carbohydrates, 6.5 g fiber, 13.3 g protein, and roughly 8 Weight Watchers PointsPlus. Keep in mind that 1 1/2 cups of dry quinoa expands to about 6 cups, so serving size affects the nutrition values.

If you divide the finished dish into six servings, each portion would be roughly 210 calories, 5.6 g fat, 31.2 g carbohydrates, 4.4 g fiber, 8.9 g protein, and about 5 PointsPlus. This makes it a reasonable option for a light meal or a wholesome side dish.

The recipe is compatible with Simply Filling as long as you include the oil within your healthy oil allowance. To make the dish more filling and boost the protein, Amanda recommends stirring in black beans, chickpeas, or cooked chicken before serving.
