French Toast Casserole

An easy and tasty way to enjoy stress-free holidays.
Ingredients
- 1 loaf French or other crusty bread (14–16 ounces), day-old or up to three days old
- 8 large eggs
- 240 ml (8 oz) heavy whipping cream
- 240 ml (8 oz) whole milk
- 65 g (1/2 cup) Pyure Organic Stevia (equivalent to 1 cup sugar)
- 1 teaspoon ground cinnamon
- Dash of salt
- 1 teaspoon unsalted butter (for greasing)
Cinnamon Apples
- 2 lbs Honeycrisp apples, peeled and cored
- 1 tablespoon unsalted butter
- 1/4 cup Pyure Organic Stevia (equivalent to 1/2 cup sugar)
- 1 teaspoon cinnamon
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
Topping options
- Blackberry Patch Syrup
- Fresh blackberries or other fruit
- Powdered sugar
- Maple syrup
Instructions
- Slice the bread into 1-inch slices, or halve a long loaf lengthwise if preferred.
- Butter a deep baking pan thoroughly on the bottom and sides.
- Whisk together the eggs, heavy cream, milk, sweetener, a pinch of salt, and cinnamon.
- Dip each bread slice into the egg mixture, then arrange the slices in the buttered 9×13-inch baking dish in two overlapping rows. You can also use two smaller pans.
- Pour any remaining custard over the bread to coat evenly. Cover with foil or plastic wrap and refrigerate for 2 hours or up to overnight.
- Preheat the oven to 350°F (175°C).
- Bake covered with foil for 40 minutes. Remove the foil, add the cinnamon apples over the casserole, and bake uncovered for an additional 20 minutes.
- Before serving, drizzle with Blackberry Patch Syrup, top with fresh fruit like blackberries, and dust with powdered sugar if desired.
How to make the cinnamon apples
- Peel, core, and roughly dice the apples; medium-sized chunks are fine.
- In a skillet, melt butter over medium-low heat. Add the sweetener and cinnamon and cook the apples for 10–12 minutes, until tender but still holding their shape.
- Remove from heat and set aside until ready to top the casserole.
Notes
You can use any sturdy bread you prefer—French bread or a pre-sliced cinnamon loaf work well. Slightly stale bread absorbs the custard better and yields a better texture.
