This Steak and Mushrooms Soup keeps the rich onion-forward base of French onion soup and adds bite-sized steak and mushrooms for extra depth—perfect for dunking bread.

Equipment

  • 6-quart Instant Pot pressure cooker

Ingredients

  • 1.5 pounds sirloin steak
  • 2 tablespoons olive oil
  • 32 ounces beef stock
  • 1 large onion, chopped
  • 8 ounces baby bella mushrooms, sliced
  • 1/2 cup red wine or sherry
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper

Instructions

  1. Trim excess fat from the steak and discard. Cut the steak into bite-sized pieces.
  2. Set the Instant Pot to Sauté. Add the olive oil and heat for 1–2 minutes. Add the steak pieces and sear until browned on each side, about 4–5 minutes total.
  3. Press Cancel to stop Sauté mode.
  4. Add the chopped onion, sliced mushrooms, beef stock, wine (or sherry), Worcestershire sauce, salt and pepper. Stir to combine. Make sure the sealing ring is in place and the vent is clear. Place the lid on and set the valve to Sealing.
  5. Press Manual (or Pressure Cook) and set to High for 15 minutes. Allow a natural pressure release for 10 minutes, then perform a quick release for any remaining pressure.
  6. Remove the lid, turn off the Instant Pot, and let the soup rest about 5 minutes. Garnish with chopped green onion if desired. Serve with toasted bread or saltines; a side salad makes it a fuller meal. Makes 8 servings.

Kitchen tip: When possible use a kitchen scale for dry ingredients for best accuracy. If you don’t have a scale, lightly stir flour and use the spoon-and-level method to avoid packing excess flour into a measuring cup.
